Ingredients

  • 200g of sushi-grade salmon, sliced thinly
  • 100g of edamame beans, cooked and shelled
  • 2 cups of mixed salad leaves, washed and dried
  • 1/4 cup of chopped spring onions
  • 2 tablespoons of sesame seeds, toasted
  • For the dressing:1/4 cup of soy sauce2 tablespoons of rice vinegar1 tablespoon of honey1 teaspoon of grated ginger1/4 teaspoon of wasabi paste
  • 1/4 cup of soy sauce

Method

  • In a small bowl, whisk together the soy sauce, rice vinegar, honey, ginger and wasabi until well combined. Set aside.
  • Arrange the salad leaves on a large platter. Sprinkle the edamame beans and spring onions over the top.
  • Drizzle half of the dressing over the salad and toss gently to coat.
  • Arrange the salmon slices over the salad and sprinkle with sesame seeds.
  • Serve with the remaining dressing on the side.
